Since doctors are dealing with blood, and needels, they benefit from a puncture resistant glove, that can save them from getting an easily transmitted disease like HIV or other STD. This is also beneficial for mechanics and tattoo artists that use gloves made of this material also. Being able to use the same glove during the whole day also saves the envinronment, and the money of the person buying those gloves.
Chemical resistance is also better in nitrile than in latex, and that is why they are also common with hairdressers, that are dealing with strong chemicals which are used in hair dyes, and other treatments.
